Over 1,400 dairy-and-egg-free vegan-vegetarian recipes are presented by Abbot Burke (Holy Protection Orthodox Monastery--Gnostic, not Orthodox Christian), including entire chapters for "Un-meat" recipes. Most of the Preface discusses the whys and whats of the ingredients used in the recipes in a very common sense fashion; some must be purchased at a whole-food or health food store. Some of the recipes included are a good Tabouli recipe, Creole Soup, Baked Beans Boston Style, Green Tomato Pickles, Convent Caramel Apple Pie. I was pleasantly surprised!
