It's week two of Marco Pierre White's quest for the finest British food and he's "heading back out into nature's larder on the hunt for starters". Sadly, though, nature isn't obliging with her larder. A boat trip with some herring fishermen in Devon is spectacularly unfruitful (a seal ruins everything), and when Marco dons a camouflage snood to shoot wood pigeon, he waits and waits . . . But the appeal of this series, I'm starting to realise, is the very fact that not everything runs smoothly, least of all Marco. "This would be a nice place to bring a bird for dinner," he leers in a cabbies' caff. And after praising a home-cured ham to his friend who makes it, Marco promptly admits to the camera that "It might not be the finest ham I've ever had . . ." His recipes this week won't be to everyone's taste - venison tartare and soused herring with beetroot, for instance. But one tip from the Michelin starred chef is worth a try: cook bacon in a microwave, he urges us, it works brilliantly.
